Quite a lot of substances exhibit that effect, and for a couple of decades now it was investigated as a way of non-invasively measuring blood glucose levels. It is indeed quite cool!

I remember seeing one of these at an Infocom trade show quite some time back.  Nobody was interested as the tech was quite obsolete, but, they had the top of the unit open with this flat plate tray with the oil where you could see the illuminated image.
