RTOS Learning Journey: Project Idea needed

You can start with some simple project like temperature/pressure/humidity logger.
You can begin with 3 threads:
1) Measurement thread requests data from sensors and archive it in some database.
2) UI thread implements displaying information and interaction with user through menu
3) Communication thread implements communication protocol with PC
