touch screen for Iot applications

hello everyone, I would like to ask your opinion.
I would like to carry out the following project:
https://www.instructables.com/ESP8266-01-IoT-Smart-Timer-for-Home-Automation/
to control the three small PCBs 8266-01 I don't want to use my mobile phone but something to always keep on the bedside table. then I thought of small capacitive touch screens with wifi such as the one below at low cost:

if you have a better one to suggest, please do so.
then replace the touch screen firmware with freeRTOS and use the browser.
can you do it this way?

Those are neat looking devices. I would say try them out, also think of adding a HA (home assistant hub) , it makes controlling-updating multiple modules a breeze and data capture too.

these smart screens are beautiful.
the only one that comes close to what I have to do is the meta portal but only for the backup battery in case of power failure.
I have to make an alarm clock and a music player, the wireless NTP function for the alarm clock is also essential, and the weekly programming of the alarms is also essential.
then as regards the music player it would be nice to use a DAC and an amplifier of my choice, certainly not that of the smart display which has small speakers and an unknown audio sector, I tried to search the network for hardware details but nothing is found. or transmit through the wi-fi to some wav player module or to a chromecast.

You can take a look at Adafruit TFT feather: https://learn.adafruit.com/adafruit-esp32-s2-tft-feather
This one is an ESP32 board with an in-built TFT screen. Good for IOT projects.
