Baby's first offline SMPS

Having now a little bit of experience building working DC-DC converters, I'd also like to learn about offline topologies that can work with mains power. What are people's favorite application notes and practical design resources? My main reference on power electronics has been Erickson's Fundamentals of Power Electronics, 2nd ed. It has chapters on modern rectifiers and resonant converters that I'm working through. The textbook is theory focused and doesn't have as much to say about rectifier and converter circuit design (and other important topics like safety and component selection), so I'm looking for something that can get me to a useful starting point for a small design project.

Probably good idea to start with the simple offline regulators: TOPSwitch and the like.  Pair with an off-the-shelf transformer, read up on insulation, clearance and creepage, review it here if applicable, test it yourself for performance, range, EMC if possible, etc.

The scope of your design work will be component selection, especially the transformer (inductance, saturation, ratio) to the regulator and application, and ensuring the layout is adequate for safety and EMC purposes.

Then move on to less pre-baked designs: specifying transformer windups (wind them yourself, probably), relating that to EMC response, choosing topology, designing the switch, choosing or designing the controller, etc.
