I would like to take a sample from a steam line (say via a 0.6mm hole this will cause a pressure drop and restrict the flow) pass that through a non contact sensor eg a tube of say 10mm id and get some idea of the moisture content.
NOTE!!!!!
I do not want to cool it. COOLING is not on the table why? Because when you cool it. it becomes 100% water!!!


If your sample flow undergoes a pressure drop then it will cool anyway

If the incoming steam was fully saturated and dry, temperature will not change because the total enthalpy cannot be changing (see steamtable). The end result is called "superheated steam", because it is hotter than saturated steam.
If the incoming steam is wet (for example 20% water content), the temperature will drop, but the steam will become dryer (energy is used to turn water into vapor, so temperature can drop).

Both are  probably not ideal for what Tim wants to do...
