Realize that accelerometres are being put in these special packages for mounting considerations (a DIP in a socket isn't fixed and isn't levelled) and also because they are quite modern technology to work with. Your best bet would be a prototype extension, but don't expect the best level of accuracy because of small variations you will get from the connection headers.
However, if you got a very steady hand (or don't drink coffee before you start soldering) you could try to glue the IC properly on a board, upside down and then solder each wire to the leadless pin. It's not ideal, not sturdy , not proffesional, and maybe same functional as the prototyping solutions, but it might work for simple purposes so you can use every type of chip you want.
