ESP32 suggestions

I picked up an ESP32 devkitC which uses the wroom32 module. Just kind of threw it in my Amazon cart for the hell of it cause it was cheap and I wanted to play. I was a little surprised to see the analog specs were so good and was thinking about playing around with it a little trying to make a miniscope or what not just for the experience and to get used to the ESP32.

Any suggestions from folks out there? I'd want to interface a mic and maybe some LV analog signal input (maybe aim for 20-30V)

Especially nice would be any recommendations on protection as basic ESD protection would be required and I'm not used to that as I'm a hobbyist though I should have most everything in a bin somewhere :)

I especially liked the video done on EEVblog Youtube channel

at about the 2:50 mark the transistors back to back as a zener shunt. Thinking that might make a nice basic protection for a probe line that will never be used for much off a bench? I'm just looking for basic I/O protection.
