Personally, I know for sure whether wear has linearity in load cells or wear only performs a scale shift...
And sorry for my English.

I think the real issue with the pill is battery life.  Checking fermentation state while brewing is only a few days even if you toss it in at the start.

Every time you open the pill to change batteries you will have to reclean and sterilize and maintain that cleanliness through insertion.  Also how easy is it to remove?

Removing it might be tricky.

It's powered by a rather honest looking 2800mAh 18650.  I have it set to connect to Wifi, run 5 or 6 readings once a second and sleep for 10 minutes.

It has a built in battery monitor, but I haven't worked out it's calibration yet.  It started at 3.4V for a 4.2V cell and it's now showing 3.2V 2 days later.  I don't know if that is a 0.8V constant drop or just proportionality for the ESP8266 ADC.

Battery life TBC.
"What could possibly go wrong?"
