I don't know about a .1" spacing; there are 19 pins to an HDMI connector if I remembered correctly, and these types of connections are typically used for high-speed serial data, which I don't believe would would work out so well if just implemented on a breadboard (needs short wires, low capacitance etc).
If you want a low profile connector with many pins which may be soldered into a custom pcb, then you can certainly get female-to-male HDMI, DVI, VHDCI, or any other connector. If nothing else works, you can always try soldering dead-bug style, but a simple ribon cable in an IDC connector is always worth considering.
