Using adjustable 1117 LDO as fixed 1.25v

I need 1.25v power source. I have adjustable version of 1117 LDO (which has 1.25 reference voltage).

Is it OK if I just connect ADJ pin to ground and don't use any resistors?

Yes. It does have a need for a minimum load, likely 10mA.

I have used LM317 with grounded ADJ pin as a replacement for some unidentified 1.2V output buck converter that blew up.

Yes you can do so. Check a datasheet for a minimum load spec as it's different for various sorts of 1117.
