Title: Resources for test equipment architecture and block diagrams

Are there any good databases or reading material that have block diagrams of test equipment architecture?

I love the tear downs that explain block by block of what's going on and can't get enough.

Are there any good books you folks recommend that just discuss the high level architectures of test equipment?

If you can get a hold of service or operating manuals for equipment you're interested in, they will often have what you're describing.  Operating manuals without a block diagram for the system will usually at least have a description of how it works, as knowing something about the architecture of the instrument is important to understanding its behavior and performance characteristics.  So if you have a particular kind of gear or manufacturer in mind, I would look towards their publicly available stuff first.  There's always places like KO4BB's repository http://www.ko4bb.com/getsimple/index.php?id=manuals (http://www.ko4bb.com/getsimple/index.php?id=manuals)
