I need a connector with the same functionality as a 3,5 mm earphone jack
that opens a existing circuit and connects a new one.

Just like a legacy earphone that disconnects a speaker and connects the earphone instead.
Or the connector of a power supply, that disconnects the battery when plugged in.

But I want something more robust, like an XLR connector.
Are such connectors available, and what are they called?

You could try the 1/4" equivalent of the 1/8"/3.5mm version. Those are physically more robust.

In terms of having something XLR with a switch, the Neutrik NC3FBV2-SW seems like it would fit the bill. ( https://www.neutrik.com/en/product/nc3fbv2-sw )
