You want to design and build a 500 VA mains transformer for 120 or 240 V ?
DES: The normal desing process is to choose a lamination, core size and stack according to the VA and mains freq, then to calculate turns ratio, and finally the wire sizes and # trurns based on bobbin winding area.
There is no spreadsheet that does this to my knowledge.
The software we used for decades was Intusoft Magnetics Designer,

But sadly the creator passed away, but it is still available.

How many do you need? Just one?
Are you familiar with safety, wire, bobbins, laminations, impregnation?
I do not reccomend DIY transformers for mains use.
Off the shelf transformers are readily avail, see Mouser/DK/RS/Farnell.
