I recall seeing a very simple 3/5V level convertor which used 1 MOSFET and little else in an Elektor schematic. I think it was bi-directional also.
I can't quite remember the details though.

The design was published many years back by Philips for use in mixed voltage I2C buses,
this document
describes the operation. It's only suitable for an open collector/drain bus.
