Few reasons
1) The inverter is already meant to run on a fluctuating battery voltage, and will generally include a low voltage cutoff to not over drain the battery.
2) most controllers I've seen don't do anything with the output besides switch ithe connection to the battery off when the voltage is low, so a simple LED light or similar load doesn't over discharge the battery. Some may regulate it, but that's not what I usually see.
3)for those that do, now you need a 300W/500W/1KW+ boost converter to provide a stable voltage to an inverter that doesn't need it because it has regulation internally when it generates the HV rails.
