Please help me identify a connector, one 2 way and the other 3 way that I need to make a custom cable from my video pattern generator to this 1980s arcade monitor
The pins look roughly 5.5mm apart?

Looks like 'standard' Molex? You'll have to dig through the datasheets to find the correct configuration.

Don't molex have square key pins? These are all round?

Molex is a company. They make a lot of things, I'm just guessing that they made those. Check the link.
