I've done this on a batch of about 50 boards on which the processor (tqfp 100) had an earlier date code, and blocking errata, than the processor used on the prototype. I remember it took less than 5 minutes to remove the bad processor and to solder the new one. For this, I always use a simple nozzle (2mm) : move rapidly all around the processor, works with all sizes of tqfp, I don't like specific nozzles, I don't see nothing and never know when it is hot, never had succes with those things. To solder, a simple iron, solder and desoldering braid.
