I have build some projects in the past, but since that is quite a task, i would not consider doing it again, unless it had the properties said above ;-).

Just want to add that I just tried ngoscopeclient to decode 1Gbit ethernet and it works quite well in combination with my Lecroy 7300A (after I had added support which wasn't difficult given the similarity to oscilloscopes which where already supported). I'm impressed! This is definitely a good piece of software to have around.
There are small lies, big lies and then there is what is on the screen of your oscilloscope.
