Spend £3 on a ebay tally counter, the mechanical kind. Saves on the "Was that 40 turns or 50 turns I just finished?" moments. You can just 'click' turns as you go or if the turns require two hands, do them in fives and then hit the tally counter 5 times.

After you buy it, put it somewhere logical, not "somewhere sensible" or you'll never find it when you need it. Perhaps in the same drawer/box as your collection of cores or spools of magnet wire. (i.e. I haven't a clue where mine is at the moment.)

The counting isn’t a problem usually. The issue is usually that as it’s 0.2mm wire, it likes to snap half way through the winding. Fortunately this is the HV secondary so not subject to the current of the primaries so at least it’s not going to smoke anything instantly.

I’m winding toroidal cores which is a little more difficult unfortunately.

You can get, or make, small toroidal winders. For small cores (but not tiny) it's not too hard to fabricobble one out of some plywood, a few rollers or skateboard bearings, and a small motor. It's one of those mechanisms that, even when you understand exactly how it works, still takes a good ten minutes imagining with your eyes shut to actually get your head around the actual workings.
