Hello I interested by your experience with modbus sensor on Arduino esp32 S3, what difficulty you encounter, or incompatibility.
I'm curious in general to know if I can consider modbus for future projects.

Lots of people do that. The hardware complexity (if you can call it that) is that MODBUS used RS-485 as the physical layer, so you need an RS-485 transceiver to convert to/from the RS-485 voltages.

According to my knowledge, Modbus is a protocol working in application lawyers. As your mentioned before, it does not care about the physical lawyer. Many people using modbus over RS485, CAN, even TCP. It's indeed a good choice for low density data transfer application.
