I need to learn programming for the STM32 architecture (STM32F205 to be exact).

Should I use the default libraries?
The best books are the datasheet, compiler manual, and library user guides. And lots of sample code pieces.
Those chips are easy if you are good with reading comprehension, and are comfortable working with large modules of code.

Thank God the datasheet is only 179 pages, compared to the reference manual that is over a 1000 pages.
