Is there a good place to go to see a collection of circuits and schematics of open source hardware? I've seen them scattered here and there but it would be nice to have a collection of them that I could look though and learn from.

Given your interest in the matter you could always use this thread as a placeholder, and paste links you find as you go along. Someone has to start.
There are some great and simple projects in this eBook, beginner friendly! Thanks for posting, I'll post whatever I put together.

sharedcircuits.com. You can start projects, upload them and share them with the world. It even parses Gerber files into layers so that you can view PCB's online.
I wonder if archive.org would be a good place to put this kind of stuff. You're pretty much assured that it won't go away like a site run by an individual could.
Hosting is fairly trivial. Putting together a good collection + useful descriptions is where the work is at.
A lot of stuff gets posted to github, but it's not the best tool for this sort of thing.
