Thermodo Hack

I saw this the other day and I have no use for it in its current form but if it could be modified id use it all the time but not sure it would be worth it.

They list accuracy of a thermistor used in the measuring circuit but I don't think that would be close to total error on something like this. Any thoughts on how accurate this device might be?
 For the Hack part what I'd like would to be able to plug a standard 10K ohm thermistor 12 foot long temp sensor with a standard 1/8" mono jack to replace the one they use if comparable as a input into this Thermodo and use the app they provide.
Any thoughts on the hack? I see no contact info for them.
