Maybe you shouldn’t limit yourself to YouTube searches? There’s lots of great information in existence in this old-fashioned thing called “text”.

Google for “capacitive touch sensor design” and you’ll find tons of information from chip makers and more, covering not only circuit design, but construction methods for the control panels themselves.
