Have done some intial tests with a simple microphone plugged into a PC's on-board sound inputs running Audacity. I had to turn the gain pretty high, and there is plenty of 'hiss'.

This site (https://www.musicrepo.com/which-usb-microphone/) has a list of actual recordings from USB microphones and I can tell the difference between some of them. The Shure sounds pretty good, but it is relatively costly.

The Samson C01U Pro gets reasonable reviews, but people mention it is a little noisy.

Another option could be some kind of 'mixer', with inputs for USB and condensor etc and output to USB?

I take it your guitar doesn't have a Fishman pickup, and you're just looking to go direct in with a mic?  Here's a couple of budget friendly suggestions.

Not sure what your input on your computer is.  2.5mm or 3.5mm  most likely.
